INGREDIENTS
1 chicken breast
SPICE MIX
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon smoked paprika
2 teaspoons chilli powder
1 tablespoon allspice
1 tablespoon ground ginger
1 teaspoon salt
1 tablespoon vinegar
1 tablespoon olive oil
BREADCRUMB & PEANUT MIX
1 ½ cups breadcrumbs
2 heaped tablespoons crunchy peanut butter
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon smoked paprika
2 teaspoons chilli powder
1 tablespoon allspice
1 tablespoon ground ginger
Pinch of salt
ONION SLICES
1 brown onion sliced
Squeeze of lemon juice
Pinch salt
½ teaspoon chilli powder
METHOD
Step 1
Heat oven to 180 degrees Celsius (Agashe is also delicious cooked on a charcoal grill or barbecue)
Step 2
Cut chicken breast into 2 cm strips and flatten with a mallet
Add all ingredients for the spice mix into a flat dish and mix
Place the chicken strips into the spice mix
With gloved hands turn the chicken to ensure each piece is well coated
Place on a plate and refrigerate overnight, or for at least an hour if you can
Step 3
Add all of the ingredients for the breadcrumb and peanut butter mix to a flat dish and mix together with clean gloved hands
Coat the chicken strips with this mix and thread each one on a metal skewer
Step 4
Bake in the oven (or char grill/barbecue) until crispy and golden – around 10 minutes
Step 5
Place onion slices on a serving plate
Squeeze a little lemon juice over the onion
Sprinkle with the salt and chilli
Step 6
Place the chicken skewers on the plate beside the onion slices to serve
