ALMOND PESTO PASTA

Cook time: 15 minutes

Serves: 2

 

Ingredients

160 g Barilla Linguini

6 small cherry tomatoes to serve

 

Pesto

½ cup of blanched almonds

3 tomatoes, deseeded and diced

3 garlic cloves, roughly chopped

1 handful  of fresh basil leaves, chopped

60 g peconino cheese

2 tablespoons olive oil

Pinch of salt

 

Method

 

Step 1

Pulse the almonds in a food processor

Add the remainder of the pesto ingredients and pulse until well mixed

 

Step 2

Heat a saucepan of water and pinch of salt until boiling

Add the linguini and cook to the packet instructions

Step 3

Using tongs, bring the pasta to a medium sized bowl

Add 2 to 3 tablespoons of pesto and mix through to coat the pasta

If needed, add a little pasta water

 

Step 4

Place a serving of the Almond pesto pasta into a bowl and garnish with cherry tomatoes to serve
