BANANA UPSIDE DOWN CAKE


PREP TIME: 10 minutes
COOK TIME: 25 minutes
SERVES: 6

INGREDIENTS

50g butter
½ cup brown sugar
2 bananas sliced lengthways

100g palm sugar grated
125g butter cubed
2 eggs
¾ cup plain flour
1tsp baking powder
½ cup desiccated coconut
Pinch salt
¼ cup milk
1tsp vanilla extract

Preheat oven to 180 degrees.

METHOD

*use a frypan that can go into the oven (make sure there is no plastic handle)

Step 1
Put frying pan on medium heat
Add butter and brown sugar and allow sugar to melt, stir it together for 1 minute.
Add bananas to caramel and then turn heat off

Step 2
Cream butter and palm sugar for 3 minutes
Add eggs and whisk for 5 minutes
Fold in flour, baking powder, coconut, salt, milk and vanilla.
When mixed through pour cake mixture over the banana caramel in the frypan. Place in 180 degree oven and bake for 35 minutes.

Step 3
When finished turn out onto a plate and serve with vanilla icecream.
