CHICKEN FAJITAS

Ingredients
Medium Yellow Capsicum cut into thin strips
Medium Green Capsicum cut into thin strips
White onion sliced finely
2 tablespoons shaved Palm sugar
2 teaspoons Dried oregano
Juice of 1 lime
¼ cup olive oil
2 teaspoons smoked paprika
Big pinch salt
600g chicken breast cut into strips
1 packet Old El Paso Flour Tortillas
½ cup sour cream
Small bunch coriander leaves.
Method
In a large mixing bowl add chicken strips, capsicum strips, onion, palm sugar, oregano, lime juice, olive oil, paprika and salt.
Heat a large frypan or a BBQ flat plate to very high heat. Add some more olive oil to the pan and cook the fajita mix in batches, careful not to over-fill the pan.
Open the tortillas and discard the freshness sachet. Microwave for 1 minute.
To serve, assemble the fajitas by adding some of the fajita mix to the tortillas, top with a spoonful of sour cream and some coriander leaves. Enjoy!
