SHREDDED CHICKEN TACOS

Ingredients
500ml chicken stock
1 jar Old El Paso taco sauce
1/3 sachet Old El Paso nacho spice mix
2 chicken breasts
1/2 cos lettuce, leave pulled apart, cleaned and quartered
1 avocado cut into long thin strips
1 packet Old El Paso large tortillas
Method
To a pot add chicken stock, taco sauce, spice mix and chicken breasts and simmer uncovered for 30 minutes.
Remove chicken breasts from the pot, shred chicken by pulling apart with two forks.
Turn up heat on the pot to reduce the liquid in the pot. Cook for 10 minutes until liquid has reduced. Then add the shredded chicken back to the pot and simmer until the liquid reduces right down into a sauce that sticks to the chicken.
to build the tacos distribute the cos lettuce and avocado on the tortillas and top with shredded chicken mix.
