FRENCH TOAST WITH HONEY CUSTARD

Ingredients
Honey Custard
2 cups milk
4 egg yolks
125g leatherwood honey
French Toast
4 thick slices brioche bread
2 eggs
1/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 cup milk
30g butter for frying
Method
Add milk to a pot on medium heat on the stove but do not boil. Heat until there is steam coming off the top.
In a mixing bowl add egg yolks and honey and whisk together. Slowly pour hot milk in with the egg yolk mix and continue to whisk until all the milk is added. Then rinse the pot out and add 2cm of water and return to the stove. Place the mixing bowl with egg yolk/milk mixture on top of the pot to act like a double boiler. Heat the pot to a gentle simmer and keep the mixture moving in the bowl. Custard will be ready when it has thickened enough to coat the back of a wooden spoon.
For the French toast add to a bowl eggs, sugar, vanilla and cinnamon and whisk together. Add the brioche bread to the mix and allow to soak through.
Add a knob of butter to a fry pan and fry the soaked bread until golden brown on both sides. French toast is ready when you press in the middle of the bread and no custard will seep through.
To serve place the French toast on a plate and pour over a generous amount of the honey custard. Top with mixed berries or sliced banana.
