STEAK TACO WITH CHIMICHURRI

Ingredients:
2 x porterhouse steak
6 x Old El Paso flour tortillas
2 cups chopped iceberg lettuce
1 avocado diced
8 cherry tomatoes quartered
Chimichurri:
small bunch Coriander roughly chopped
1 long red chilli roughly chopped
Small bunch Parsley roughly chopped
2 teaspoons dried oregano
30ml red wine vinegar
30ml olive oil
1 clove of garlic finely sliced
1 tablespoon dijon mustard
Method
Season steak with a generous amount of salt and leave to sit
Blitz all the chimichurri ingredients in a food processor
On a very hot griddle pan sear the steak and cook to medium rare, leave to rest for 5 minutes and slice into thin strips
Assemble the tacos with by dividing the steak, lettuce, tomatoes and avocado and the drizzling each taco with a generous amount of chimichurri.
