TOTOPAS STEW

Serves: 5
Ingredients:
3 cloves garlic finely sliced
1 brown onion diced
2 tablespoons cooking oil
500g rump steak diced
1 sachet Old El Paso Chili spice mix
2 tablespoons tomato paste
1 400g can tomatoes
1 can Old El Paso Black Beans
1 can Old El Paso Refried Beans
2 cups beef stock.
2 bay leaves
1 cup grated tasty cheese
Method
Preheat oven 180 degrees Celsius
In a large pot cook garlic and onion with the cooking oil until soft. Then add steak chunks and the spice mix and cook for 5 minutes. Add tomato paste, tomatoes, black beans, refried beans, beef stock and bay leaves and stir all ingredients together well. Simmer for 45 minutes on stove. Using a ladle move the stew to a baking dish. Top with corn chips and sprinkle the cheese on top. Bake until cheese is slightly browned (about 10-15 mins)
