SERVES 4-6

INGREDIENTS

2 tbs extra virgin olive oil

350g streaky bacon (or guanciale or pancetta), thinly sliced

1 red onion, finely chopped

6 garlic cloves, crushed

2 × 400g cans cherry tomatoes

Zest and juice of 1 lemon

400g rigatoni or penne

150g grated pecorino or parmesan

 

METHOD

Step 1 

Bring a pot of salted water to the boil, add your pasta, and cook it until it’s perfectly al dente.

Step 2

While the pasta is cooking, start by slowly cooking the bacon in a cold pan until the fat renders out. Once it’s crispy, remove the bacon. In the same pan, sauté the onions and garlic until they smell delicious. Add your two tins of cherry tomatoes and let everything simmer until it turns into a beautiful, rich sauce. Add a squeeze of lemon juice to brighten the flavours.

Step 3

When the pasta is done, mix it into the sauce and stir everything together. Serve it up, top each plate with the crispy bacon, and finish with freshly grated cheese. Enjoy!
