APPLE AND GINGER GALETTES


PREP TIME 10-15 minutes
COOK TIME 25-30 minutes
SERVES 4

INGREDIENTS

2 sheets frozen sweet shortcrust pastry, just thawed 

3 red delicious apples, cored and cut into wedges 

Juice of ½ lemon 

1 tbsp grated fresh ginger 

1 tbsp demerara or raw sugar, plus extra for sprinkling 

1 egg 

METHOD

Step 1

In a mixing bowl, combine the apple wedges, grated ginger, and sugar, tossing well to evenly coat the apples.

 

Step 2 

Place an oven-proof pan over medium heat, then add the apple mixture, spreading the slices evenly across the bottom. Allow them to gently caramelise for a few minutes, stirring occasionally. 

Step 3 

Lay a sheet of pastry over the apples, tucking in the edges around the apples to form a snug covering. Transfer the pan to the oven and bake at 200°C for about 25 minutes, until the pastry is golden and the apples are tender. 

Step 4 

To serve, carefully flip the galette onto a plate, pastry-side down. Sprinkle with a little extra demerara sugar for added crunch and enjoy the warm, spiced flavours of apple and ginger.
