APPLE CARAMEL PUDDING

SERVES 4-6

INGREDIENTS

4 Granny Smith apples, peeled and diced 

150g blueberries 

130g brown sugar 

1 egg 

100ml buttermilk 

200g self-raising flour 

2 tbsp leatherwood honey 

1 tsp baking powder 

50g melted butter 

80g caster sugar 

METHOD

Step 1 

In a large bowl, mix the honey, brown sugar, diced apples, and blueberries until the fruit is well coated. Set aside to let the flavours mingle and the fruit macerate. 

Step 2 

In a separate bowl, combine the flour, baking powder, and caster sugar. Add the buttermilk, melted butter, and egg, mixing everything until you have a smooth hotcake-like batter. 

Step 3 

Spoon the fruit mixture into individual baking dishes, then spread the batter evenly over each. Bake at 180°C for 20-25 minutes, or until golden and set. 

To Serve 

Enjoy warm straight from the dish with a dollop of cream or a scoop of vanilla ice cream. A perfect balance of caramelised fruit and honey sweetness—deliciously comforting!
