BEEF AND GUINNESS PIE

Cook time: 40 minutes

Serves: 4

 

Ingredients

1 onion sliced finely

2 tablespoons olive oil

500g beef mince

2 tablespoons brown sugar

3 tablespoons tomato paste

1 tablespoon malt vinegar

2 tablespoons Dijon mustard

1 cup Guinness

6 small potatoes cut into quarters

2 tablespoons olive oil for drizzling

 

Method

Preheat oven 180 degrees Celsius

To a pan on medium/hot heat add olive oil and onion and soften

Add mince and cook until browned

Add brown sugar, tomato paste, vinegar, mustard and Guinness and cook for 5 minutes

Turn out pie filling to a pie dish and top with potatoes

Drizzle potatoes with olive oil and put in oven for 40 minutes until potatoes are cooked through
