HOT AND NUMBING PORK

Ingredients

500g Pork Belly cut into 1cm strips

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon chilli flakes

1 teaspoon Sichuan peppercorns

1 tablespoon sesame seeds

2 cloves garlic finely chopped

2cm knob of ginger finely sliced

1 tablespoon sugar

3 tablespoons soy sauce

2 tablespoons kecap manis

¼ cup peanuts

¼ cup plain flour

500ml vegetable oil for frying

 

Method

Mix all ingredients except for flour and cooking oil to a bowl and mix together and leave to sit for 30 mins. Then add the flour and mix through and sit for another 30 mins

Heat oil in a wok until when you submerge the handle of a wooden spoon it starts to bubble then in small batches fry the pork until golden and drain on a paper towel

Add a good pinch of salt before serving.
