BEN’S CHICKEN FAJITAS

COOK TIME 40 minutes
SERVES 4

INGREDIENTS

Marinade

Juice and zest of 3 limes

30 g/1 oz palm sugar

2 cloves garlic, sliced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon cayenne pepper

1 teaspoon cumin

1 teaspoon cinnamon

Salt and pepper

1 tablespoon olive oil

3 chicken breasts or 6 chicken thighs, cut into strips

2 tablespoons olive oil

2 onions, cut in half and sliced

1 small green capsicum/bell pepper, cut into strips

1 small red capsicum/bell pepper, cut into strips

1 small yellow capsicum/bell pepper, cut into strips

8 flour tortillas

Sour cream to serve

METHOD

Step 1 

Combine all the marinade ingredients in a bowl and mix well with the chicken. Cover with cling wrap and let it sit in the fridge for at least 30 minutes.

Step 2

Once the chicken is marinated, sauté it for 5 minutes. Then add the capsicum and onion, continuing to sauté until the meat and vegetables are fully cooked through.

Step 3

To serve, warm up the tortillas according to the instructions. Spoon the filling straight from the pan into the tortillas, then top each with a dollop of sour cream. Enjoy!
