BREAD AND BUTTER PUDDING

Ingredients
2 eggs
1/4 cup sugar plus extra for dusting
pinch salt
1tsp vanilla extract
1/2 cup cream
1tsp cinnamon
1 sourdough baguette
1/2 cup blueberries
100g butter cut into 1cm cubes
Method
Pre-heat oven to 180 degrees.
Whisk together eggs, sugar, salt, vanilla.
Add cream and whisk.
Add cinnamon and whisk through.
Roughly chop baguette and put into a food processor blitz to chop it up roughly. It's ok if there are still some chunks of bread.
Add bread to the custard mix and stir through. Leave to sit for 10 mins.
Stir blueberries through the mix.
Pour the mix into a greased baking dish and scatter butter cubes on top.
Finish with a sprinkling of sugar on top of the pudding.
Bake in oven for 35 mins or until you push on top of the pudding and there is no liquid that seeps through.
