BRUSCHETTA


PREP TIME: 20 minutes

COOK TIME: 10 minutes

SERVES: 2

 

INGREDIENTS

4 thick slices of sourdough bread

Freycinet Olive Oil

1 garlic clove, whole

½ red onion, finely diced

8 cherry tomatoes cut into quarters

2 teaspoons capers, chopped

2 teaspoons red wine vinegar

2 teaspoons sugar

1 tablespoon Freycinet olive oil

Pinch of salt

5 fresh basil leaves, chopped

 

METHOD

Step 1

Drizzle olive oil on the slices of sourdough

Place the slices in a heated griddle pan, oil side down

Drizzle olive oil on the other side of the bread

Toast both sides until they are golden

 

Step 2

While the toast is hot, rub the garlic clove over the top of each slice to add a subtle garlic flavour

 

Step 3

Place the onion, tomatoes, salt, vinegar, sugar and capers into a bowl

Mix and stand for around 30 minutes

Add the basil

 

Step 4

Place the sourdough toast onto a serving dish and spoon the tomato and onion mixture on top
