BURRITO BOWL


PREP TIME: 15 minutes

COOK TIME: 20 minutes

SERVES: 2

 

INGREDIENTS

1 Old El Paso Mexican Rice kit

1 Old El Paso Burrito Spice mix

1 chicken breast, diced

1 red onion, sliced

1 chilli, sliced

1 garlic clove, sliced

Pinch of salt

1 tablespoon olive oil

2 kale leaves, chopped

2 small sticks of celery chopped

 

METHOD:

Step 1

Place the chicken in a bowl with the onion, chilli, garlic, oil and salt

Add the seasoning mix from the Mexican Rice kit and the Burrito Spice Mix

Toss together to coat the chicken evenly

 

Step 2

Sauté the chicken and spices mix in a frypan

Add the rice and sauce from the Mexican Rice kit and stir

Add 1 ⅓ cups of water and simmer for 10 minutes

Add the kale and cook for 5 minutes

Add the chopped celery and cook for 1 minute

 

Spoon the chicken and rice into a serving bowl

Top with sour cream and a sprinkle of coriander

Serve with corn chips at the side to scoop from this delicious burrito bowl
