NEW POTATO SALAD
PREP TIME: 15 minutes
COOK TIME: 8 minutes
SERVES: 2
INGREDIENTS
4 new season potatoes, washed
1 tablespoon olive oil
Juice of ½ lemon
Pinch of salt
1 tablespoon parsley, finely chopped
DRESSING
½ cup sour cream
1 shallot, diced
2 gherkins, diced
½ teaspoon horseradish, grated
1 teaspoon seeded mustard
1 tablespoon parsley, finely chopped
1 tablespoon parmesan, finely grated
METHOD:
Step 1
Place potatoes into a saucepan of cold water and bring to the boil
Cook for around 5 minutes until tender, then strain
Cut potatoes into quarters and return to the saucepan
Step 2
Add the olive oil, lemon juice, salt and parsley to the warm potatoes and gently mix through
Step 3
Place the dressing ingredients into a bowl and mix together
Step 4
Serve the potatoes with the dressing on the side
