CHORIZO AND SALAMI BOLOGNESE
PREP TIME: 10 minutes
COOK TIME: 20 minutes
SERVES: 2
INGREDIENTS:
100 g (½ jar) Barilla Mediterranean Pesto Rustico
160 g Barilla Collezione Casarecce pasta
100 g salami, roughly chopped
3 extra salami slices to serve
1 chorizo sausage, skin removed and roughly chopped
1 cup tomato passata
1 zucchini
METHOD
Step 1
Place chorizo and salami into a food processor and blitz until it is minced
Place the mince in a frypan, add the pesto and stir through
Sauté for 2 to 3 minutes
Add the passata, reduce the heat and cook for 10 to 15 minutes
Step 2
Peel the zucchini into ribbons, discarding the core
Step 3
Cook the pasta using the packet directions
Step 4
Spoon pasta into the pan with the meat and tomato sauce and stir to coat the pasta
Step 5
Place the zucchini ribbons in the base of a serving plate and cover with the pasta and meat sauce
Add a couple of extra salami slices to serve
