BUTTERFLIED CHICKEN


PREP TIME 15 minutes
COOK TIME 45 minutes
SERVES 4

INGREDIENTS

1 Whole Chicken

2 teaspoons of chili flakes

2 teaspoons of smoked paprika

1 tablespoon of dried oregano

¼ cup of sherry vinegar

¼ cup of olive oil

2 cloves of garlic, diced 

Salt to tase

 

METHOD

Step 1
To butterfly the chicken place the chicken breast side down on a chopping board. Using kitchen shears cut either side of the backbone to remove it from the whole chicken. Once this is done turn the chicken over, so breast side is up then push on the breast to flatten the chicken out.

Step 2

Place the remaining ingredients in a small bowl and mix to combine. Then put the chicken on a roasting tray and coat with the paprika mix and place in the oven for 45 minutes basting with the juices every 15minutes. After cooking allow the chicken to rest for 10 to 15 minutes before serving.
