DUCK FAT POTATOES


PREP TIME: 15 minutes
COOK TIME: 60 minutes
SERVES: 4

INGREDIENTS

1kg of Roasting potatoes, peeled and cut into desired pieces

200g of Lov-a-duck, duck fat

Salt to season  

 

Pre-heat the oven to 180 degrees Celsius

METHOD

Step 1
Place the potatoes into a saucepan and cover with water, bring the water to the boil and cook the potatoes until just tender, strain the potatoes and shake the potatoes in the saucepan to rough up the edges (this is important to create starch on the outside edges of the potato to give the potato a crunchy finish).

Step 2

Place the potatoes in a roasting tray and evenly cover with duck fat, season with salt and place in the oven for 45minutes or until golden brown
