CHARRED CORN SALSA

SERVES: 2
INGREDIENTS
2 cups of corn kernels
2 shallots, thinly sliced
1 chili, sliced
¼ bunch of coriander, chopped
¼ of a cup crème fraiche
¼ cup of sugar
¼ cup of white vinegar
METHOD
Step 1
To Pickle the shallots gently heat the vinegar, sugar and a pinch of salt until the sugar has dissolved, then turn off the heat and allow to cool. Place the sliced shallots in a bowl then cover them with the cool pickle mixture.
Step 2
To char the corn, heat the kernels in a frypan with a little oil until the corn blackens.
Step 3
To make the salsa mix the corn, chili, coriander, shallots, crème fraiche and a little of the pickle mixture and a pinch of salt
