EXTRA TASTY SUPER MILD CHICKEN NACHOS WITH SALSA


PREP TIME: 20 minutes

COOK TIME: 40 minutes

SERVES: 2

 

INGREDIENTS

CHICKEN

1 chicken breast, diced

1 tablespoon oil

1 packet Old El Passo Taco spice mix

PICO DE GALLO

8 cherry tomatoes, diced

½ red onion, finely diced

2 tablespoons coriander, chopped

Pinch of salt

GUACAMOLE

1 avocado, diced

Juice ½  lime

1 packet of Old El Paso Original Spice Mix for Guacamole

 

1 cup grated cheese

½ jar of Old El Passo Salsa

METHOD

Step 1

Heat oven to 180 degrees Celsius

Step 2

Put chicken breasts in a bowl and sprinkle with olive oil

Add the spice mix and turn the chicken until it is evenly coated with spice

Step 3

Heat a griddle pan to a medium heat

Add the chicken and cook for 7 to 8 minutes

Remove from the heat and let rest for 5 minutes

Step 4

Mix the diced chicken, grated cheese and tomato salsa in a bowl

Step 5

Put the diced avocado in a bowl

Add the pico de gallo ingredients

Sprinkle the guacamole spice mix on top and stir through

Step 6

Spread a layer of corn chips on the base of a baking dish

Top with the chicken, cheese and salsa mix

Bake in the oven for 25 to 30 minutes

Top with guacamole to serve
