CHICKEN ALFREDO
PREP TIME: 15 minutes
COOK TIME: 30 minutes
SERVES: 2
INGREDIENTS:
8 large Swiss brown mushrooms, sliced
1 chicken breast, diced
2 garlic cloves, sliced thinly
1 cup dry white whine
1 cup cream
60 g Ashgrove cheese, finely grated
1 tablespoon fresh parsley, chopped
1 sprig of fresh thyme (leaves only)
120 g Barilla Linguine
METHOD
Step 1
Cook the mushrooms in a frypan with a knob of butter and a tablespoon of olive oil
Add the chicken and garlic and continue to cook
Add the dry white wine and cook to reduce the liquid by half
Add the cream and cook to reduce the liquid by half
Add 60 g finely grated Ashgrove cheese to the sauce and stir
Step 2
Cook the linguine in boiling water
Add the linguine to the chicken and mushrooms sauce
Allow to sit for a couple of minutes
Add the fresh parsley and thyme
Spoon onto a serving plate and season with salt and pepper
