CHICKEN SATAY BRAISE

Serves 4

 

Ingredients

25g butter

500g chicken thighs diced

1 small red onion diced

1 tomato, deseeded and diced

1 long red chili finely sliced

2 cloves garlic finely diced.

1 cup peanut butter

1.5 tsp cumin

1.5 tsp ground coriander

1.5 cups chicken stock

Juice 1 lime

 

Method

Cook chicken in butter in a hot pan for about 5 minutes. Add red onion, chili, garlic and cook for another 5 minutes. Add cumin and coriander and stir through on high heat, add peanut butter and stir through. Add stock and simmer for 30 minutes. Add tomatoes and lime juice and simmer for another 5 minutes.
