SUNDRIED TOMATO AND SALAMI PENNE

Ingredients

75g pancetta

75g salami

1/2 cup sundried tomatoes

3 tablespoons olive oil

1 cup tomato passata

1 cup cream

250g penne pasta

 

Method

Cook penne as per packet directions

Place salami, pancetta, sundried tomatoes and olive oil to a food processor and blitz into a mince paste.

Add a little more oil to a frying pan and then add the mince mix and cook on a high heat. Add passata and simmer until the passata has reduced by half. Add cream and simmer for another 5 minutes.

Add pasta to the pan with a splash of pasta water. Mix together well and simmer for another minute to allow the pasta water to thicken with the sauce. Season with salt and pepper.
