MEDITERRANEAN BBQ SKEWERS

Serves 4

 

Ingredients

1 red onion cut into wedges

1 Zucchini cut into chunks

1 red capsicum cut into large chunks

500g Chicken breast cut into large chunks 

Juice of 1 Lemon

¼ cup olive oil

 

Dressing:

½ cup Greek yoghurt

1 tsp Cumin

1 tsp Coriander

1 tsp Salt

Juice 1/2 lemon

2 tsp Fresh Thyme leaves 

 

 

Method

Soak Skewers in water overnight to avoid them burning.

Skewer vegetables and chicken evenly on skewers and cook on a charcoal BBQ or hotplate/frying pan. Mix lemon juice and olive oil in a bowl and with a pastry brush or a sprig of rosemary regularly baste the skewers as they are cooking.

For the dressing mix all dressing ingredients in a bowl.

To serve drizzle the dressing over the top of the skewers.
