MARINATED PRAWNS COOKED OVER CHARCOAL WITH SALSA VERDE

Ingredients

6 large king prawns, heads on still in shells

 

Salsa Verde (Green sauce) Dressing:

Small bunch Mint – finely chopped

Small bunch Parsley – finely chopped

Small bunch coriander – finely chopped

2 anchovy fillets Finely chopped into a mince

Juice of 1 lemon

¼ cup Olive oil 

1 tablespoon Red wine vinegar 

1 tablespoon Capers finely chopped

1 teaspoon Dijon mustard 

 

 

 

Method

If using wooden skewers soak the skewers in water overnight to avoid them burning.

Skewer prawns all along their back so they are nice and straight and cook them on a charcoal BBQ or a hotplate/frying pan.

Mix the salsa verde ingredients together in a bowl.

When prawns are ready serve with salsa verde on top or on the side as a dipping sauce.
