COCONUT & BROWN SUGAR RICE PUDDING

COOK TIME 10-12 minutes per batch
SERVES 2-4

INGREDIENTS

1 cup jasmine rice

2 tsp butter

2½ cups (625 ml) young coconut water

1 tbsp caster sugar

¼ tsp table salt

½ cup (125 ml) coconut cream

½ cup (45 g) brown sugar

2 cups (10 g) coconut flakes, toasted

METHOD

Step 1 

In a medium-sized saucepan, melt the butter over medium heat. Add the jasmine rice and stir to coat the grains in butter. Toast the rice lightly until fragrant.

Step 2

Pour in the coconut water, coconut cream, coconut flakes, and brown sugar. Stir well, then cook over medium heat, stirring occasionally, until the liquid is absorbed and the rice is tender.

Step 3

To serve, divide the rice pudding into bowls. Garnish with a sprinkle of brown sugar and a pinch of salt.
