CORN WITH NORI AND LEMON BUTTER

Serves: 4 (side)
Ingredients:
2 sheets nori seaweed
1 cup chicken stock
Juice half a lemon
100g butter
4 corn cobs
Method
Heat chicken stock to a simmer on the stove and reduce by half
Blitz nori in a food processor until it’s a powder and add to the stock. Add lemon juice and butter. When the butter has melted completely remove from heat and set aside
Place corn on a hot grill pan and using a pastry brush baste corn with the lemon nori butter. When corn is cooked give the cobs a final generous basting with the butter before serving.
