KING PRAWNS WITH CORIANDER COMPOUND BUTTER

Ingredients:
½ cup coriander (including stems) roughly chopped
Juice and Zest 1 lime
1 long red chilli chopped
1 clove garlic diced
3 anchovies chopped
125g butter cubed
6 large king prawns shells on
Method
Pre-heat oven to 165 degrees Celsius
To a food processor add coriander, lime juice and zest, chili, garlic, anchovies and butter. Blitz until it mixes together. Place in the fridge until needed
For the prawns peel the legs and shell from the body but leave the tail and the head on.
Place prawns on a lined baking tray
Spoon a generous amount of butter over the prawns and roast in the oven for 10 minutes. Save the rest of the butter for another day.
