COUSCOUS SALAD WITH CITRUS DRESSING

INGREDIENTS
1 cup burghul
1 cup quinoa
1 cup couscous
1 tomato, deseeded and finely diced
½ cucumber, deseeded and finely diced
4 spring onions, sliced diagonally
¼ cup chopped mint
¼ cup chopped flat-leaf parsley
¼ cup chopped coriander
½ cup blueberries, halved
¾ cup mixed salad leaves
Dressing
Juice of 2 limes
Juice of 1 orange
¼ cup olive oil
2 green chillies, deseeded and diced
2 garlic cloves, diced
Salt and pepper, to taste
METHOD
Step 1
Prepare the burghul, quinoa, and couscous according to their packet instructions.
Step 2
In a large bowl, mix together the tomato, cucumber, couscous, quinoa, burghul, spring onions, mixed leaves, blueberries, and herbs.
Step 3
To make the dressing, combine the lime juice, orange juice, olive oil, chillies, garlic, and salt and pepper in a mason jar. Shake well to mix, then pour your desired amount over the salad and toss to combine.
Step 4
To serve, simply spoon the salad into bowls and enjoy!
