CREAMY MUSHROOM PASTA


PREP TIME 10 minutes
COOK TIME 20 minutes
SERVES 2

INGREDIENTS

120g Barilla Linguine
2 cups mixed mushrooms roughly chopped
30g black fungus rehydrated and chopped
2 cloves garlic roughly chopped
2 tablespoons olive oil
2 teaspoons of truffle salt
2 cups cream
Chopped parsley to serve

METHOD

Step 1
Cook linguine as per packet instructions

Step 2
In a pan over medium heat add olive oil, mushrooms and black fungus. Sprinkle truffle salt.  Cook for 10 minutes tossing occasionally. After 10 minutes add the cream and simmer for another 5 minutes.

Step 3
Using tongs move the linguine into the mushroom sauce and include some of the pasta water.  Stir pasta and pasta water through the sauce. Allow to sit for 2 minutes.

Step 4
Serve with a sprinkle of chopped parsley
