PORK AND FENNEL SAUSAGE ROLLS


PREP TIME: 10 minutes
COOK TIME: 45 minutes
SERVES: 5

INGREDIENTS

½ bulb fennel finely diced.
1 large brown onion finely diced
2 cloves garlic finely diced
1 tablespoon olive oil
500g pork belly (or 500g pork mince)
½ cup breadcrumbs
3 sheets puff pastry


METHOD

Step 1
Cook garlic, fennel, and onion in olive oil with a pinch of salt until softened then set aside and allow to cool.

Step 2
Dice pork belly and feed it through the KitchenAid mincer. Add a large pinch of salt and then with your hands mix through the fennel/garlic/onion mix followed by the breadcrumbs

Step 3
Lay out the defrosted puff pastry one at a time. Cut in half. Spoon a line of pork mixture down the middle of the pastry and carefully roll into a long sausage roll. Score the along the top of the pasty and then cut to desired size. Repeat until all pork mixture is finished. Bake 180 degrees Celsius for 45 minutes or until golden. Serve with a good tomato sauce.
