CREAMY MUSHROOM PENNE

Ingredients:

150g Swiss brown mushrooms roughly chopped

150g button mushrooms roughly chopped

75g butter

1 clove garlic finely sliced

1 tbs onion jam

1tbs finely chopped thyme

125ml chicken stock

1/2 cup mascarpone

125g Barilla penne pasta

100g grated parmesan

 2 tsp truffle salt

Method:

Place mushrooms in a pan over medium heat with a sprinkle of salt and butter for about 10 minutes

Cook penne in salted boiling water

To the mushrooms add garlic, onion jam, thyme and stir through.

Add chicken stock and increase heat to simmer and cook until the liquid reduces by half

Add mascarpone and reduce heat to low and add truffle salt

When penne is cooked add penne to pan with a little of the pasta water mix through so pasta is coated.

Serve with some freshly grated parmesan
