TRUFFLE SPAGHETTI

Serves: 2

 

Ingredients:

2 cloves garlic finely sliced

1/4 green pitted olives halved

2 tbs olive oil

1 Spring onion finely chopped

1/2 cup Cream

1/2 cup white wine

1/4 cup chopped parsley

1/4 cup chopped dill

1 pack Huon Cold Smoked Salmon roughly chopped

125g Barilla Spaghetti

 2 tsp Truffle salt

Method:

Heat a large pot of well salted water ready for Spaghetti. When it’s boiling add the spaghetti and cook as per packet instructions.

In a pan on medium/high heat add olive oil, olives and garlic and simmer until garlic softens

Add wine and cream to the pan and gently simmer for 5 minutes

Add spring onions, herbs and smoked salmon to the pan and stir through, turn off heat

When spaghetti is ready use tongs to move spaghetti into the pan, include a little of the pasta water and stir spaghetti through with the truffle salt.
