SMOKED SALMON

Prep time: Overnight

Cook time: 40 minutes

Serves: 6

 

Ingredients

1 side of Salmon

8l water

40g salt

2 tbs juniper berries

2 tbs coriander seed

2 tbs fennel seed

 

Method

To make the brine in a large tub or wide bucket mix water, salt and spices.

Add salmon and put in fridge at least 3-4 hours ideally overnight.

When ready for smoking. Pre-heat the smoker to 140 degrees celsius. Cut salmon into pieces that will fit on the smoking rack and smoke for 1 hour.
