Ingredients

400g pork mince

400g beef mince

1 clove garlic finely diced

1/2 large onion finely diced

Old el paso nachos spice mix

1tsp salt

2 tablespoons dry rice

800g tinned tomatoes

400g grated tasty cheese

2 tbs cooking oil

 

Method

Preheat oven to 180 degrees Celsius.

Add pork and beef, garlic, onion, spice mix, salt and rice to a bowl and use your hands to mix together

Use wet hands to roll small portions of the mince mix into small meatballs

Add cooking oil to a large saucepan on medium/high heat and fry meatballs so they are brown on the outside. You may need to do this in batches to avoid overloading the pan. They do not have to be completely cooked through at this stage just browned.

Add the tomatoes to the pot with the meatballs mix together then pour everything into a baking dish. Cover with cheese and bake in an oven for 35 minutes.

Serve with some more freshly grated cheese.
