UPSIDE DOWN PINEAPPLE AND CHILLI CAKE

125g butter
1c sugar
3 eggs
½ cup milk
1 ¼ c SR flour
¾ c brown sugar
1 tin of pineapple – including juice
Cayenne pepper
Method
Cream butter and sugar together.
Add eggs and mix.
Fold in flour and milk.
In a high-sided frying pan (use a plan that can go in the oven) add brown sugar and juice and heat to a boil then simmer until liquid has halved. Then add pineapple and cayenne pepper.
Add cake batter on top of the syrupy pineapple. Bake in the frypan for 25 mins at 180 degrees Celsius.
