BLUEBERRY PUDDING

Ingredients
80g butter
1 cup sugar
125ml buttermilk
2 cups SR flour
1 tsp cinnamon
1 tsp allspice
1 tsp baking powder
2 eggs
2 cups blueberries
1 tsp vanilla extract
60ml gin
Method
Preheat the oven to 180 degrees Celsius.
Cream sugar and butter together (save 2 tablespoons of sugar to mix through blueberries) for about 5-10 minutes until sugar has dissolved then add 1 egg and continue mixing and then add the second egg.
Prepare dry ingredients in a mixing bowl add flour, cinnamon, allspice and baking powder.
Add 1/4 cup of dry mix to the butter/egg/sugar mix and the buttermilk and mix together.
Then fold in the dry mix, saving 1/2 cup of dry mix to the side.
In a greased cake tin add blueberries, vanilla, gin and the sugar and dry mix that you set aside earlier and mix together well.
Add a handful of the blueberry mix into the cake mix.
Then pour all of the cake mix over the blueberries in the cake tin.
Bake for 35 minutes or until a skewer inserted into the middle of the pudding comes out clean.
Serve hot with vanilla ice-cream.
