AGUACHILE

Ingredients
6 large king prawns cooked
1/2 cup olive oil
1 avocado
Juice of 1 lemon
1 pack of Old El Paso chilli spice mix
Method
Peel prawns and keep the heads and shells on the side.
Add prawn shells to a pan with 1/4 cup olive oil.
Add 1/3 packet of spice mix to pan cook on medium/low heat, stir and cook for 10 mins.
Remove from pan and drain oil through a sieve into a bowl, allow to cool.
Finely slice avocado in the skin and use a spoon to remove. Fan avocado on the plate.
Place prawns on avocado and drizzle with the prawn oil.
Serve with micro-herbs and squeeze of lemon juice.
