CHAR-GRILLED CHAR SUI PORK RIBS

Ingredients
6 x pork spare ribs
3 tablespoons honey
2 tablespoons hoi sin sauce
2 teaspoons Chinese 5 spice
3 x whole star anise
1/4 cup Shaoxing wine
1/4 cup brown sugar
2 cloves garlic finely chopped
1 tablespoon finely chopped ginger
zest of 1 orange
Pinch salt
Method
Mix all marinade ingredients together in a bowl. Marinate pork ribs for at least 1 hour or overnight if possible.
Cook pork ribs on a BBQ, hotplate or frying pan, keeping the left-over marinade to regularly baste while cooking.
