HONEY, GINGER AND APPLE COBBLER

Ingredients
250g honey
2cm knob of ginger finely diced
1 teaspoon vanilla extract
60ml sweet white wine
1 teaspoon corn flour
3 apples cored and diced
1.5 cups SR flour
1 tsp cinnamon
1 tsp ground ginger
80g butter
1 egg
1/3 cup milk
Method
Preheat oven to 180 degrees Celsius.
Add honey and ginger to a pot on low heat, add vanilla.
In a glass mix the corn flour and white wine well so there are no lumps, add to the honey mix in the pot.
Add diced apples (can be with skin on or off depending on your preference). Increase heat to medium and simmer for 5 minutes.
Pour apple honey mix to a pie tin and add a pinch of salt.
To make the cobbler dough add flour, cinnamon, and ground ginger to a mixing bowl. Using your fingers rub the butter into the flour until it resembles breadcrumbs.
Add egg and milk and mix together into a dough similar to a scone dough. Pour out onto a bench and knead slightly and form it a flat round about 2cm high.
Using a cookie cutter cut the dough into rounds and place on top of apple mix in pie dish
Bake for 15-20 minutes until golden on top.
Serve with cream or vanilla ice cream
