APPLE AND PEAR CRUMBLE

Ingredients

200g palm sugar

3 apples cored and diced

3 pears cored and diced

1 teaspoon vanilla extract

1 cup self-raising flour

1 cup oats

1 cup slivered almonds

1 cup desiccated coconut

125g butter

1 cup brown sugar

Method

Preheat oven to 180 degrees.

Add palm sugar and 1/2 cup water to a pot on medium heat.

Add apples and pears and vanilla to the pot, coat with the palm sugar mixture and remove from heat.

To a mixing bowl add flour, oats, slivered almonds, coconut, brown sugar and butter. Use your hands to rub the butter into the dry ingredients.

Spread out apples and pears in a high-sided baking dish, cover with the crumble mixture and bake for 30 minutes or until golden on top.

Serve hot with thick cream.
