PERI PERI CHICKEN

Serves: 4

 

Ingredients

4 chicken thighs

1 tablespoon smoked paprika

2 cloves garlic finely sliced

2 tablespoons red wine vinegar

Zest 1/2 lemon

1 long red chilli thinly sliced

Pinch salt

1 tablespoon olive oil

1/2 teaspoon dried organo

1 teaspoon ground coriander

1 teaspoon ground cumin

Juice of half a lemon (for marinade)

Juice of half a lemon (before serving)

 

Method

Add all of the marinade ingredients to a bowl and mix well. Coat chicken thighs with the marinade and sit for 2 hours or overnight if possible.

Cook on a hot BBQ grill until cooked all the way through. Before serving finish with some lemon juice and a big pinch of salt.
