CHARRED COS LETTUCE WITH CREAMY ANCHOVY DRESSING

Serves: 4

 

Ingredients

2 x baby cos lettuce

2 anchovy fillets

1/2 cup creme fraiche

Juice of 1/4 lemon

3 toasted macadamia nuts

 

Method

Cut each of the Cos in half, drizzle with olive oil and a sprinkle of salt.

Place cos halves cut side down on a charcoal grill.

Chop anchovy fillets as finely as possible so it makes almost a paste.

Add creme fraiche and stir with lemon juice.

Remove cos from the grill when nicely charred and immediately drizzle with a little more olive oil.

To serve smear a big dollop of the creamy dressing on the plate and place cos on top. Finely grate the macadamia on top for a delicious nutty topping.
