VEGETABLE PESTO PASTA SALAD

Serves: 4

 

Ingredients

2 Cobs of Corn

1 Zucchini finely sliced rounds

150g Cherry Tomatoes halved

250g Barilla Farfalle Pasta

1/2 teaspoon chilli flakes

1 jar Barilla basil pesto

Juice of 1/2 lemon

 

Method

Cook pasta as per packet instructions and when ready strain and allow to cool.

Char corn over a gas hob or under a grill, allow to cool and cut the kernels from the cobs

to a large bowl add zucchini, cherry tomatoes, cooked and cooled pasta and corn kernels and stir well. Add the whole jar of pesto and stir well and finish with a squeeze of lemon juice.
