MEDITERRANEAN LAMB SALAD

Ingredients
1 medium sweet potato roughly chopped
1 red onion cut in half then each half cut into 3 (leaving end intact)
1 chorizo cut into 1/2cm rounds.
2 cloves garlic roughly chopped
3 tablespoons olive oil
1 lamb backstrap
200g feta cheese crumbled
Handful flat leaf parsley roughly chopped
Juice half a lemon
Olive oil for drizzling
Method
Preheat oven to 180 degrees.
Add sweet potato, red onion, chorizo rounds and garlic into a baking dish, coat with olive oil and add a big pinch of salt and roast for 25 minutes or until the vegetables start to brown.
Take out the lamb and season by drizzling with olive oil and a sprinkle of salt. Heat a frying pan to a high heat then place lamb in the pan. Cook for about 3 minutes per side. Remove from heat and allow to rest for 3 minutes. After it's rested carve into slim strips.
When vegetables are ready, assemble the salad by arranging vegetables on the plate. Top with lamb, feta and parsley squeeze lemon juice on top and drizzle olive oil and another pinch of salt.
