RHUBARB AND APPLE COBBLER

Ingredients
2 sticks rhubarb cut into 2cm batons
2 apples diced
2 tsp cinnamon
2 tsp ground ginger
1/4 cup maple syrup
1/4 cup tablespoons brown sugar
Juice 1/2 lemon
2 cups plain flour
2 tsp baking powder
125g butter
2 eggs
1 cup cream
1/4 cup milk
Method
Preheat oven to 180 degrees.
in a baking dish place the apple and rhubarb with 1 tsp cinnamon, 1 tsp ground ginger, maple syrup, 2 tablespoons brown sugar, lemon juice and a tablespoon of plain flour.
In a mixing bowl add the flour, baking powder and butter. Use your hands to rub the butter into the flour, it will be ready when the flour mix resembles bread crumbs. Add the remaining cinnamon, ground ginger, brown sugar and mix together.
In another small mixing bowl add the cream and eggs and whisk together. Then add eggs and cream to the dry ingredients. Mix together. Then add the milk and mix.
Finally pour the cobbler mix on top of the apple and rhubarb and bake for 35 minutes or until golden brown on top.
Serve with double cream.
