FENNEL AND SALMON SALAD

Ingredients
1 bulb fennel finely sliced
2 fillets Huon salmon
1 cup Butter lettuce leaves
1 cup Red muzuna leaves
Small bunch Mint – chopped
Small bunch Parsley – chopped
Small bunch Coriander – chopped
Small bunch Tarragon – chopped
Small bunch Chives – chopped
Dressing
Tablespoon honey
White wine vinegar
Olive oil
Pinch salt
Crack pepper
Method
To cook the salmon place the fillets of salmon skin side down in an oiled hot pan and cook for 4 minutes. Flip and cook for another 4 minutes.
For the dressing mix together all dressing ingredients in a small bowl or a jar. Mix all the salad ingredients in a large salad bowl and just before serving stir through the dressing.
Serve salad with the salmon fillet.
